
Road Tripping Vegan-Style

There are two things I never mind spending money on. One is food, because eating delicious, healthy, organic things equals health insurance. Great food nourishes our bodies, gives us pleasure and keeps us healthy. The second is travel. Travel nourishes the soul, gives us pleasure and keeps us alive with memories, experience, photos, etc. I have a fair amount of stuff, but it’s the memories of the good times I’ve had that really make me happy. Life is about the journey, right?
I just got back from a long road trip across the country. My good friend John was planning on exploring California for a while and invited me to make the trip out there with him. Needless to say, I jumped at the chance to travel and eat great food! We took our time, stopping in Plano, Austin, Big Bend National Park, El Paso, Tempe and Joshua Tree. We parted ways in Palm Springs where I rented a car and drove to L.A. to visit with friends and eat at some fantastic restaurants.
I have to say, L.A. was great. It was wonderful to connect with new and old friends. But the journey out there was the best part. Exploring new cities with a great friend who eats even more healthily than I do was amazing. We ate fabulous food, got lots of exercise and sunshine, had some amazing discussions and laughed a LOT. I took hundreds of photos and I will have those memories forever. Totally, totally worth every penny.

I’m inspired and am definitely planning a road trip to the west coast this summer (though it might be because I’m moving there)! Must manifest that Prius. (c;

Sounds like an amazing trip!
Did you check out Real Food Daily in LA? I love that place! I just made some of their incredible ricotta cheese for a party last weekend.

I thought it would be too tough to travel being vegan but, I’m so glad I found your blog to see that it really is possible!
