What does a vegan eat for Christmas Dinner?

Well, of course I can’t speak for all vegans.  That would just be silly!  But THIS vegan prepared and enjoyed a lovely Christmas dinner of Celebration Roast, broccoli mushroom tofu quiche, homemade stuffing/dressing, mashed potatoes and roasted Brussels sprouts, all topped with Tofurky mushroom gravy.  For dessert, Breanna’s Vegan Pumpkin Pie.  Oh, and wine of course. ;)

Everything was very tasty, if I do say so myself.  I’m glad I have lots of leftovers!

Hope you all are having lovely holidays.  Here’s to 2009!  I have a lot of big plans for the coming year, including some great things for this site.  Stay tuned!

    I couldn’t find any field roast at my WholeFoods and I wanted to try it! Oh well I bet it’s there now and on sale ;)

    This beats my vegetarian carb fest that I try to construct without the turkey trimmings (mashed potatoes, stuffing, sweet potatoes, salads), though I’ll tell you: my mother’s shiitake chestnut apricot stuffing is truly to be loved and adored by all vegetarians and vegans alike! Yum yum to a healthy Thanksgiving dinner!

    I am not a vegetarian, however, having been raised a “Red Diaper Baby,” I grew up with very little animal product in our diet, and have continued that practice as an adult. I am a cookbook author and have my own website, http://www.thequestingfeast.com. This month I am of course featuring things appropriate to Thanksgiving, including A Vegetarian Thanksgiving Feast.

    You might enjoy taking a look. Perhaps it will give you a few ideas. I tried hard to get across the idea that one can have a festive and celebratory meal without serving up a critter as the main event.
